Jess’ Quick Lime and Broccoli Mix
Sorry, I ate half of the tortilla before relizing that this recipe was a keeper! |
Ingredients
1 Red Tomato
½ Whole Red Onion (small sized)
½ Cup of Cilantro
3 Cups of Fresh Spinach
1 ½ Cups of Broccoli (not chopped)
1 Can of Whole Kernel Corn
½ of Lime
Sea Salt
About 3 tsp of Coconut Oil
3 Corn Tortillas (I Used El Milagro because it’s All Natural! ;))
Prep
Directions
Pour Coconut Oil into Skillet and let oil get hot
To Cook the Corn Tortillas
The tortillas don't take very long to cook. Just oil your skillet with olive oil and place the tortilla on top of the oil. Sprinkle salt and flip the tortilla over. Cook till the tortilla is crisp. You will probably be reapplying oil and salt for each tortilla.
Add chopped Onions and Tomatoes to Skillet. Let them cook for about 3 to 5 minutes and sprinkle with Sea Salt
Next add chopped Cilantro
Then chopped Broccoli
Squeeze Lime over mixture and, again, sprinkle with Sea Salt
Add Spinach. Let cook for about 3-5minutes or until spinach is soft and stringy instead of crisp and leafy.
Top the mixture off with Corn, sprinkle Sea Salt, and soon your mix will be finished!
Chop Tomato, Onion, Cilantro, Spinach, and Broccoli
To Die for Crock Pot Roast
A while back I was looking for a good crock pot recipe online and came across the To Die For Crock Pot Roast recipe. I thought since it had "to die for" as a part of the recipe name, that it couldn't be bad. I was right! This Pot roast recipe is delicious. It's so delicious that I could not help but to share the recipe with others!
Ingredients
1 beef roast, any kind
1-1/4 oz package of dried brown gravy mix
1-1/4 oz package of dried Italian salad dressing mix
1-1/4 oz package of dried ranch dressing mix
*(I added a small package of baby carrots and 2 medium sized potatoes)
1/2 cup water *(since I added carrots and pototoes I used 1c of water instead of 1/2c water)
Directions
Place beef roast in crock pot
Mix the dried ingredients together in a bowl and sprinkle over the roast.
(If desired) Place veggies in crock pot
Pour the water around the roast.
Cook on low for 7-9 hours.
One way to improve this recipe is to rub the dry ingredients on the roast instead of just sprinkling it.
Enjoy!
